SANDWICHES ON THE BRAAI (Braaibroodjie)

Typically South African, the braaibroodjie (braaied toasted sandwich) is often the highlight of any braaing experience. South Africans often braai meat simply as an excuse for eating braaibroodjies. The traditional braaibroodjie comprises a sandwich of mature Cheddar cheese, tomato, and onion slices, chutney, salt and pepper, with olive oil or butter spread on the outside.

Serves 6 – 8 as a snack

Ingredients:

-Brie with Spicy Tomato and Apricot Sauce
-400 g brie cheese, divided into 100 g sliced portions
-8 slices white bread
-150 ml spicy tomato and apricot sauce (see page 105), divided between 4 slices of white bread
-Olive oil for brushing
-Sweet Chilli or Chutney, Cheese and Tomato
-200 g mature Cheddar cheese, grated (500 ml)
-150 ml sweet chilli sauce or chutney
-3 tomatoes, sliced
-1 onion, peeled and sliced into rings
-Freshly-ground black pepper, to taste
-8 slices white or ciabatta bread
-Olive oil for brushing

Method:

1. Place brie or mature Cheddar cheese onto 4 slices of bread.
2. Spread spicy tomato and apricot sauce / sweet chilli sauce / chutney over the cheese.
3. Add tomatoes and onions if desired.
4. Cover with second slice of bread. Brush olive oil or butter on the outside of the bread slices.
5. Turn over and brush other side.
6. Place sandwiches onto a wire braai grid with a fixed handle; close tightly.
7. Place over very moderate coals for 5 – 6 minutes; turn braai grid over and cook the other side for a further 4 – 5 minutes, until bread is toasted, and cheese has melted.
8. Remove from grid and cut into wide strips. Serve immediately.
