Packed with crunchy, healthy root veggies, nuts and herbs, this salad is a great feast!
Serves 4 – 6
400 g carrots, grated
250 g cooked or raw beetroot, grated
1 small head celery, washed and sliced thinly
1 bunch radishes, washed and sliced thinly
1 butter lettuce, washed and torn into pieces
200 g feta, crumbled
1 bunch mint, washed and chopped
60 ml flaked almonds, toasted (optional)
Dressing:
Juice and rind of 2 limes
45 ml olive oil
1 clove garlic, crushed
5 ml sugar
Salt and freshly-ground black pepper to taste
1. Arrange all salad ingredients onto a flat platter, sprinkling the feta, mint and toasted almonds on top
of the salad.
2. Mix all dressing ingredients together and pour over salad immediately prior to serving.
