Favourite Family Fish
This is sure to go down a treat.
Serves 4
Ingredients:
Sauce:
- 30 g butter or margarine (30 ml)
- 15 g cake flour (30 ml)
- 125 ml milk
- 125 ml cream or yoghurt
- Salt and pepper to taste
Fish filling:
- 500 g cooked, white fish such as hake or dorado, flaked
- 4 spring onions, chopped
- 125 g button mushrooms, sliced, and/or 250 ml frozen peas, or mixed vegetables
- Juice and rind of 1 lemon
Topping:
- 45 ml grated Cheddar cheese
- 45 ml dry breadcrumbs
- 45 ml chopped fresh parsley
- 5 ml paprika
Method:
- Preheat oven to 200ºC/180ºC fan/ Gas mark 6.
- Make sauce: Melt butter or margarine in a saucepan, stir in flour, cook for a minute, and then add in the
milk and cream. Stir until thickened, and season to taste. Alternatively make sauce in the microwave
oven. - Add in flaked fish and spring onions. Microwave mushrooms, peas and/or mixed vegetables on
100% power for 2 – 4 minutes; add into sauce. Stir in lemon juice and rind. - Pour into an ovenproof baking dish. Mix together topping ingredients, sprinkle mixture over fish.
- Bake for 15 – 20 minutes until golden brown.
- Serve with steamed green beans or a simple salad.
Variation:
• Whip 2 egg whites, fold in topping ingredients and spread over the surface of fish. Bake until golden brown.
