Favourite Family Fish

This is sure to go down a treat.
Serves 4

Ingredients:

Sauce:

  • 30 g butter or margarine (30 ml)
  • 15 g cake flour (30 ml)
  • 125 ml milk
  • 125 ml cream or yoghurt
  • Salt and pepper to taste

Fish filling:

  • 500 g cooked, white fish such as hake or dorado, flaked
  • 4 spring onions, chopped
  • 125 g button mushrooms, sliced, and/or 250 ml frozen peas, or mixed vegetables
  • Juice and rind of 1 lemon

Topping:

  • 45 ml grated Cheddar cheese
  • 45 ml dry breadcrumbs
  • 45 ml chopped fresh parsley
  • 5 ml paprika

Method:

  1.  Preheat oven to 200ºC/180ºC fan/ Gas mark 6.
  2. Make sauce: Melt butter or margarine in a saucepan, stir in flour, cook for a minute, and then add in the
    milk and cream. Stir until thickened, and season to taste. Alternatively make sauce in the microwave
    oven.
  3. Add in flaked fish and spring onions. Microwave mushrooms, peas and/or mixed vegetables on
    100% power for 2 – 4 minutes; add into sauce. Stir in lemon juice and rind.
  4.  Pour into an ovenproof baking dish. Mix together topping ingredients, sprinkle mixture over fish.
  5.  Bake for 15 – 20 minutes until golden brown.
  6.  Serve with steamed green beans or a simple salad.

    Variation:
    • Whip 2 egg whites, fold in topping ingredients and spread over the surface of fish. Bake until golden brown.
