Luci’s Best-Ever Potato Salad
Another of Luci´s favourite recipes, which can be made ahead of time – even a day before. This allows the flavours to develop. Luci rates this as the best-ever potato salad – hence its name, Luci’s Best-Ever Potato Salad! It is colourful, different
and very modern in taste.
Serves 8 – 10
Ingredients:
- 1.5 – 2 kg fresh new baby potatoes, pricked
- Sea salt and freshly ground black pepper
- 125 ml spring onions, chopped
- A large bunch of fresh sweet basil, chopped
- 125 ml mayonnaise
- 125 ml sour cream
- 50 ml milk
- Dash of paprika or cayenne pepper
- Seasoning to taste
- 250 ml Parmesan cheese
- 250 ml pine nuts or slivered almonds,toasted
Method:
- Boil new potatoes until just tender but not mushy.
- Drain and allow to cool; then halve potatoes, and season with salt and pepper. Place in a large bowl.
- Add in spring onions and fresh basil.
- Mix together mayonnaise, sour cream, milk, paprika or cayenne pepper and
seasoning to taste. Pour over potatoes. - Add 125 ml Parmesan cheese and toss mixture lightly.
- Place into a serving dish. Top with remaining Parmesan cheese and toasted pine nuts or almonds.
- Garnish with some fresh basil leaves.
