Everyone loves a doughnut! Adding bananas and yoghurt to the batter gives it a healthy twist and makes you a batch of Marvellous Mini Banana Doughnuts. The addition of chocolate chips adds texture and makes these little morsels quite a treat.
Using a food processor/hand blender or electric food mixer and a Mini Doughnut Maker
Makes approximately 45 – 50 small doughnuts
Ingredients
- 2 small bananas, mashed
- 170 g tub fat-free plain yoghurt (1/2 cup)
- 100 g granulated sugar (125 ml) (1/2 cup)
- 2 large eggs, lightly beaten
- 30 g butter, melted (30 ml) (2 tablespoons)
- 5 ml vanilla essence (1 teaspoon)
- 280 g self-raising flour (500 ml) (2 cups)
- 3 ml baking powder (1/2 teaspoon)
- Pinch of salt
- 100 g dark/milk chocolate chips (125 ml) (1/2 cup)
Method
1. Start heating the doughnut maker.
2. Combine mashed banana with yoghurt and sugar.
3. Blitz the mixture in a food processor/blender if you want a smooth texture.
(Best mixed in the Kenwood food mixer).
4. Mix in eggs, melted butter, and vanilla essence.
5. Add sifted flour, baking powder and salt to the batter and mix until just combined.
Do not over-mix!
6. Fold in the chocolate chips.
7. Place a teaspoon of batter into the wells of the hot doughnut maker and close the lid; cook for a few minutes until the doughnut maker lid pops up/doughnuts are golden brown.
8. Serve & enjoy your marvellous mini banana doughnuts.
Tips
- • Dredge doughnuts with sifted icing sugar or castor sugar.
- • Omit chocolate chips and use finely chopped nuts instead.
- • Serve with a caramel dipping sauce.
