New Potato and Rosa Tomato Salad
Nourish your mind as you would your body. You cannot survive on junk food alone. This New Potato and Rosa Tomato Salad is not only attractive; it is simply delicious!
Serves 6 – 8
Ingredients:
- 1 kg new potatoes, unpeeled and halved
- 100 g fresh green beans, topped, tailed, and halved horizontally
- 120 g cucumber, thinly sliced
- 100 g red Rosa baby tomatoes
- 100 g black Kalamata olives
- 100 g feta cheese, cut into cubes
- 1 red onion, peeled and sliced thinly
- 15 ml olive oil
- 30 ml white wine vinegar
- 15 ml brown sugar
- 1 ml salt
- 5 ml mustard powder
- 5 ml fresh or 2 ml dried thyme, chopped
- 5 ml fresh or 2 ml dried basil, chopped
- 15 ml fresh parsley, chopped
Garnish: Sprigs of fresh basil
Method:
- Cook the potatoes on the hob in boiling water, or microwave on 100% power for 7 – 8 minutes, until just tender. Drain and halve when cool.
- Place green beans into a small casserole dish with 100 ml water. Cook on 100% power for 2 – 3 minutes, until just blanched. Rinse in cold water; drain well.
- Arrange halved potatoes, green beans, cucumber, baby tomatoes, olives, and feta cheese on a platter. Arranged in rows looks attractive. Top with sliced red onion.
- For the dressing: Place all the ingredients into a food processor; or use a plunge blender and blitz. Chill well. Pour over salad just before serving.
- Garnish with fresh basil.
Tip:
- Prick potatoes before microwaving, otherwise, they may burst.
