This Zesty Halloumi Spring salad with yoghurt and herb dressing can be enjoyed in the warmer evenings of Spring, the soft and creamy fried Halloumi pairs well with the zesty homemade Yoghurt and herb dressing. This recipe is a delicious way to incorporate more fresh vegetables into your diet therefore contributing to good health.
Ingredients:
- 250 g of Halloumi rounds or strips
- 1 teaspoon of Coconut oil
- 1 teaspoon of Lemon juice
- Seasoning mix of Paprika, Salt and Pepper
Salad Dressing:
- 4 Tablespoons of plain Yoghurt
- Seasoning mix of Paprika, Salt and Pepper
- Chives
- Fresh Italian Parsley
- 2 Tablespoons of lemon juice
Salad base
- Baby Spinach leaves
- Micro Herb salad mix
- Baby tomatoes
- 1 Mini English cucumber
- Almond slivers
Methods
To prepare your Halloumi
In your frying pan or pancake pan place some coconut oil until heated up, fry the Halloumi, with the seasoning mix adding a dash of lemon juice halfway through, for 6 minutes.
Yoghurt and Herb Dressing
Place the ingredients into your blender or food processor and add 4 Tablespoons of Plain Yoghurt, Chives, Parsley, 2 Tablespoons of lemon juice, and seasoning, and Blend until well combined. You can add water for a thinner consistency but make sure it is not too thin as it will spoil the flavors.
The salad base
To put the salad together you will need to layer the baby spinach with the micro herbs and then add your cucumber and baby tomatoes so that they are placed along the length of the salad.
Then place the Halloumi along the top of the salad and pour over the Yoghurt and Herb dressing and finish off with a sprinkle of almonds and some more micro herbs.
