Diwali celebrations with Kreamy Kreations
Diwali celebrations with Kreamy Kreations were on the cards at the recent Hirsch’s Kitchen Kapers event. The event was held in Hirsch’s Springfield park in the newly launched Siemens live kitchen and hosted live by Hirsch’s executive director Margaret Hirsch. The mom and daughter duo whipped up some of their favourite family Diwali treats. These included Burfee, coconut ice and Akshi’s favourite Diwali inspired cupcakes.

Akshi is the owner and chief baker for her bakery business Kreamy Kreations. They specialise in cakes and treats of all occasions and are a proudly Durban based company. Aksi has been operating her business for four years now on her own and couldn’t be happier. “It has been a fun four years for Kreamy Kreations, we have met the most amazing people who have become family,” said Akshi.

Denver Naicker, MC and Hirsch’s PRO also joined in on the celebrations and spoke about Diwali as a celebration “it is a celebration of good over evil and everything of the best in you”. “The main celebration is focused around a king and queen who were forced into exile and how after 14 years Rama returned to his people after defeating evil”. “It Is the celebration of light and how light conquered evil”. This is why it is called the festival of lights. Commented Margaret Hirsch, “I just love Diwali I love the food, the colour but most of all I love that it is all about bringing positive energy into your life”.
Akshi added that Diwali is all about food and cooking delicious food and sweet treats with family, “We love this time of year myself my mum and my girls all get together and cook in the morning and then it’s off to my mom-in-law to cook and enjoy spending time with them”. The event ended off with Akshi, her Mom and Denver giving thanks and wishing all who attended live a blessed Diwali.

Recipes
Coconut Ice Recipe
Ingredients:
- 3 cups of icing sugar
- 3 cups of desiccated coconut
- 1 tin of condensed milk
- Food colour of choice.
Method:
Mix the Food colouring and condensed milk together then slowly add the coconut and icing sugar in gradually.
Mix well the ingredients well and shape as desired.
You can get creative with decorating by adding chopped nuts and glitter.
“I love to use a dehydrated rose and edible foil’ said Akshi.

Almonds chopped and coloured
Drizzle with chocolate.
Burfee recipe
Ingredients
- 1 cup of Icing sugar
- 500g Klim (full cream milk powder)
- 50ml Ghee or Butter
- 1 teaspoon Cardamon Powder
- Colour almonds bits
SYRUP
- 2 cups White sugar
- 1 ¼ cups Water
Method
Boil the sugar and water together until the sugar is dissolved and it is clear. Allow to cool down. In a bowl sift the icing sugar, Klim and cardamon powder together. Rub Ghee or Butter into the Klim, add the syrup to the mixture until it is a smooth and creamy texture. Empty the mixture into a greased and lined baking tray or dish. Sprinkle with coloured almonds and refrigerate until set. When cold and set, cut in squares or shape as desired.
