Stewed Blackberry Buttermilk Flapjacks
These Stewed Blackberry Buttermilk Flapjacks are a great addition to any breakfast table. The fresh bursts of blackberries add a tangy flavour which accompanies the Buttermilk flapjacks well.
To make the Flapjacks
Ingredients
- 375ml of Buttermilk
- 1 large egg
- 2 Tablespoons of melted unsalted butter
- 1 1/2 cups of cake flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1 Tablespoon of sugar
- 1/4 teaspoon of salt
Method
Combine all of the wet ingredients into a large bowl and mix them until well combined. Then sift the dry ingredients into a separate bowl and lightly whisk the dry ingredients to incorporate air. Then add the wet mixture into the dry ingredients while lightly mixing the ingredients in to form a batter. To cook the flapjacks heat up a greased nonstick pan place a spoonful of mixture into the pan and allow to puff up and brown. Turn the flapjacks when multiple small bubbles appear and allow the rear side to brown.
To make the Stewed Blackberries
Ingredients
- 4 cups of fresh rinsed and drained blackberries
- 1⁄2 a cup of water
- 1⁄2 a cup of sugar
- 1 Tablespoon of lemon juice
- 1 pinch of salt
Method
Place the blackberries in a saucepan add the water and allow to stew on low for approximately 15minutes stirring occasionally. Then add the sugar, lemon juice and salt and allow a syrup to form this should take approximately 5 minutes. Lastly, remove the mixture from the heat and top your flapjacks with the warm berry mixture.
Serve and enjoy.
