Black Cherry Gateau
This Black Cherry Gateau is made using a soft vanilla sponge. Then layering the surface with fresh Black Cherries. Black cherries are now in season and make a fine addition to your summer menu. Cherries hold many different health benefits one of them is the hormone melatonin which assists in aiding a good nights rest.
- Self-raising flour -200 g
- ½ teaspoon baking powder
- Caster sugar-160 g
- Butter – 200 g
- 3 large eggs
- 1 tablespoon vanilla extract
- 4 tablespoons of milk
- 1 cup of fresh sliced, pitted cherries
Method
Preheat your oven to 180’C and grease and line your baking tin. We would recommend using a 30cm round tin as it will give the batter the space it needs to rise. Using your mixer place the butter and sugar and cream until light and fluffy. Then once fluffy add the eggs and vanilla one at a time until it is incorporated. Remove the mixer and slowly add the flour and baking powder and fold it in. This will add air into the batter. Place your batter into the baking trays and lightly tap them. Lastly, generously sprinkle the cherries on top on the sponge and make a gentle swirl. Bake the sponge for 25-30minutes or until a pressed skewer stick comes out clean.
