Looking for a fun Halloween-inspired recipe? Try this delicious Chocolate Pumpkin Flapjack Stack. Filled with healthy smashed pumpkin and decadent spices these are a scrumptious healthy treat.
Ingredients for the Chocolate Pumpkin Flapjack Stack.
- 1 1/2 cups of sifted self-raising flour
- 50ml of brown sugar
- 2 Beaten eggs
- 3/4 cup of milk
- 1 /2 a cup of *pumpkin puree
- 1 slab of dark or milk chocolate melted
How to make the pumpkin puree
Add 100g of Pumpkin cubes into a microwave container with a drizzle of olive oil, 1 teaspoon each of cinnamon, nutmeg and brown sugar. Cook on high for 12minutes or until tender. Once the pumpkin is tender enough place it in a blender with 50ml of cream to create a thick creamy pumpkin puree.
Method
- In a bowl add the flour, sugar and eggs and mix until well combined.
- Next slowly add the puree and milk until no lumps are present.
- Heat the grill pan and gently ladle some of the mixture onto the non stick pan or grill.
- Once small bubbles appear on the surface turn the flap jack over quickly and finish cooking on the other side.
- Once cooked dip one of the sides of the flap jack into the melted chocolate and place it on the plate. Carry on dipping and stacking. Serve with honey and your favourite breakfast drink and enjoy.
