A plateful of At Our Table’s Instant Pot Bacon Carbonara can transport you to a Roman trattoria. Made with just a few ingredients, it’s simple to recreate at home.
Ingredients
- Dash of Olive Oil
- 1 tsp chopped garlic
- 2 x packs of streaky bacon
- 1 x punnet mushrooms sliced (optional)
- 1 x 500g packet Fussila pasta
- 500mls fresh cream
- 3 eggs
- 1 tsp Nutmeg
Method
- Set your Instant Pot to “saute” and hot fry your bacon with a dash of olive oil.
- Remove bacon and add your mushrooms and garlic.
- Once the mushrooms are soft and cooked remove and add to bacon.
- Add 4 cups of stock to the pot along with the bag of pasta.
- Set your Instant Pot to “High Pressure” mode for 2 mins.
- While you are waiting for the pasta, whisk 500mls fresh cream, 3 eggs and 1 tsp nutmeg in a bowl.
- Once the pasta has cooked for 2 mins, do a “quick release.” Remove your lid and add the bacon and mushrooms along with the cream mixture. Stir and allow to thicken for a few minutes. Serve and top with parmesan and fresh parsley.
