Easter Menu: Easy Braaied Lamb Roast with All the Trimmings

Braaied Lamb Roast with Mint Sauce

Ingredients:

  • 2 kg leg of lamb
  • 4 garlic cloves, sliced
  • 2 tbsp olive oil
  • 2 tbsp rosemary
  • Salt and black pepper
  • 1 cup mint sauce

Method:

  1. Rub lamb with oil, garlic, rosemary, salt and pepper.
  2. Preheat braai to medium heat.
  3. Place lamb in a roasting tray, cover loosely with foil and cook with lid closed for 1½–2 hours.
  4. Remove foil for the last 20 minutes for colour.
  5. Rest before slicing and serve with mint sauce.

Roast Potatoes & Butternut

  • Parboil potatoes for 10 minutes.
  • Toss potatoes and butternut in olive oil, salt and herbs.
  • Roast beside the lamb until golden.

Easy Toffee Pudding

Mix:

  • 1 cup flour
  • 1 tsp baking powder
  • ½ cup sugar
  • 1 egg
  • ½ cup milk

Bake until golden, then pour over warm toffee sauce made from cream, butter and brown sugar.
