Three Recipes Worth Turning the Oven On For

How to make it

Roll out the chilled pastry and carefully place it into a pie dish. Chill the prepared shell for around 30 minutes.

Before adding the filling, blind bake the crust using parchment or foil and pie weights. This extra step helps create a crisp base instead of a soggy one.

Whisk the eggs together before adding the cream, milk, salt and pepper.

Once your crust is ready, layer in the ham, Gruyère and chives before gently pouring the egg mixture over the top.

Bake until the filling is puffed and mostly set, with just a slight jiggle remaining in the centre. Allow it to cool before slicing and serving.

How to make it

Prepare and chill your pie dough before beginning the filling.

Cook the chicken, carrots and celery until the chicken is cooked through and the vegetables have softened, then drain.

In a separate pan, cook the onion and garlic in butter before adding the flour and seasoning. Gradually add the chicken stock and half-and-half to create a thick, creamy sauce.

Combine with the chicken and vegetables and add the frozen peas.

Line your pie dish with the first layer of pastry, add the filling and finish with your second layer of pastry. Seal the edges, cut a few small slits into the top to allow steam to escape and brush with egg wash.

Bake until that top crust is beautifully crisp and golden and the filling is bubbling underneath.

3. Classic South African Malva Pudding

And, of course, we saved something sweet for last.

Few desserts say South African comfort quite like a warm Malva pudding.

Brown sugar, apricot jam and vanilla to create that familiar soft, sweet sponge before finishing it with a rich cream sauce. The sauce is poured over the pudding while it’s still warm, allowing all that goodness to soak right through.

How to make it

Preheat your oven to 180°C.

Beat the butter, sugar, apricot jam and egg together until the mixture becomes lighter and slightly fluffy.

In a separate bowl or jug, combine the milk, vinegar and vanilla. In another bowl, combine the flour and baking soda.

Gradually alternate adding the milk mixture and flour mixture to your butter mixture, mixing as you go.

Pour the batter into a lightly greased ovenproof dish and bake for approximately 45 minutes.

For the sauce, combine the butter, cream, brown sugar and water in a saucepan. Bring it to the boil and simmer for around three minutes while stirring.

Once the pudding comes out of the oven, gently pierce it in a few places with a fork before slowly pouring the warm sauce over the top. Give it 10–15 minutes to soak up all that goodness before serving.
