Luci’s Best-Ever Potato Salad

Another of Luci´s favourite recipes, which can be made ahead of time – even a day before. This allows the flavours to develop. Luci rates this as the best-ever potato salad – hence its name, Luci’s Best-Ever Potato Salad! It is colourful, different
and very modern in taste.
Serves 8 – 10


  • 1.5 – 2 kg fresh new baby potatoes, pricked
  • Sea salt and freshly ground black pepper
  • 125 ml spring onions, chopped
  • A large bunch of fresh sweet basil, chopped
  • 125 ml mayonnaise
  • 125 ml sour cream
  • 50 ml milk
  • Dash of paprika or cayenne pepper
  • Seasoning to taste
  • 250 ml Parmesan cheese
  • 250 ml pine nuts or slivered almonds,toasted


  1.  Boil new potatoes until just tender but not mushy.
  2.  Drain and allow to cool; then halve potatoes, and season with salt and pepper. Place in a large bowl.
  3.  Add in spring onions and fresh basil.
  4.  Mix together mayonnaise, sour cream, milk, paprika or cayenne pepper and
    seasoning to taste. Pour over potatoes.
  5.  Add 125 ml Parmesan cheese and toss mixture lightly.
  6.  Place into a serving dish. Top with remaining Parmesan cheese and toasted pine nuts or almonds.
  7. Garnish with some fresh basil leaves.
