Hirsch's Favourite Milk Tart

Milk tart is a perennial South African favourite. The ease of preparation and cooking makes this a dream recipe – what is not to love? Try making our Hirsch’s favourite Milk Tart in small muffin pans – easy for serving

Ingredients

Filling

  • 250 ml cream
  • 45 ml cornflour (Maizena)
  • 375 ml milk
  • 30 ml granulated sugar
  • 75 g butter (75 ml)
  • 5 ml vanilla essence
  • Ground nutmeg
  • 3 large egg yolks, beaten
  • Ground cinnamon

Crust

  • 140 g wheat cake flour (250 ml)
  • 30 ml castor sugar
  • 125 g butter, cubed (125 ml)
  • 1 large egg yolk
  • 45 ml iced water
  • Pinch salt

Method

1. Make the pastry: Sift flour and salt into the food processor which has been fitted with the double-knife stainless-steel blade; add castor sugar; pulse to blend.

2. Drop butter cubes down the feeder tube whilst the machine is running and process until bread crumbs result.

3. Mix egg yolk and cold water together; add into the food processor with the machine running. When the mixture forms a ball, stop the machine.

4. Wrap the pastry in cling film and refrigerate for 30 minutes.

5. Preheat oven to 180ºC/160ºC fan/Gas mark 4.

6. Grease a 23 cm round baking dish and press the dough as thinly as possible into the base and up the sides of the dish.

7. Bake the crust for 10 minutes; remove, and allow to cool while preparing the filling.

8. Make the filling: In a bowl add the cream and Maizena together, and whisk to combine.

9. In a saucepan, over a medium to high heat, bring the milk to the boil. Add the sugar and butter, and stir constantly until boiling point is reached. Remove from the heat. Add the vanilla essence and pinch of nutmeg; stir, and pour over the cream mixture, mixing well.

10. Add a little of the hot milk mixture to the egg yolks; whisk well, and then pour into the milk mixture and whisk very well. The mixture should start to thicken immediately.

11. Pour the mixture into the pie crust and bake for 20 – 25 minutes.

12. Remove from the oven, sprinkle with cinnamon, and serve warm or cold.

13. Serve and enjoy your Hirsch’s favourite Milk Tart.
