Vegan Chocolate Chia Seed Pudding.
This Vegan Chocolate chia seed pudding is a great way to celebrate World vegan day, which is celebrated globally on the 1st of November. It is filled with lots of nutrients and chocolatey flavours. Chia seeds are loaded with protein, fiber, Antioxidants, and Omeg3, and when soaked overnight create a creamy dessert-like texture.
This recipe is super easy to follow and can be done in a flash.
For the Chia pudding
- ½ a cup of chia seeds
- 1/3 cup of cocoa powder
- 2 Tablespoons of Maple syrup
- 1 ¼ cup of coconut milk
- 1 teaspoon of Vanilla essence
For the topping
- Refrigerated coconut cream
- ½ a cup of granola
- 1/3 a cup of cocoa powder
- 2 Tablespoons of maple syrup
- A Pinch of salt
For the Chia pudding base
To make our chia pudding base we are going to add one and a quarter cup of coconut milk into a blender with 1/3 a cup of cocoa powder, 1 teaspoon of vanilla, and 2 tablespoons of maple syrup. Blend all of these ingredients together until well combined and then mix them into half a cup of chia seeds in a large bowl and allow the mixture to soak in the fridge overnight. Once the Chia seeds have swollen dish the mixture into single dessert glasses.
In a mixing bowl add the granola, cocoa powder, salt, and maple syrup and mix them all together then spread the mixture onto a baking sheet and bake for approximately 20 minutes or until lightly toasted. Take the coconut cream out of the fridge, you will notice that the thick cream has separated to the top of the tin scoop off this cream and use your fork to fluff it up. Add this topping on top of the chia seed pudding base and sprinkle over the toasted cocoa granola and enjoy your vegan chocolate chia seed pudding.
A great alternative is to swap out the cocoa for fresh mango and top the dessert with fresh mango chunks.
