You can have your cake and eat it too with these Delicious Keto Red Velvet Cupcakes. These cupcakes are a perfect treat for a Valentine’s day surprise. They are low in carbs and taste delicious.
Ingredients for the Keto Red Velvet Cupcakes
- 2 cups of almond flour
- ¼ cup of coconut flour
- ½ cup granulated Suki sweetener
- 2 tsp of baking powder
- 2 tbsp of cocoa powder
- 4 tbsp of butter softened
- 3 tbsp of heavy cream
- 5 large eggs
- 2 tsp vanilla extract
- red food colouring
- 120g of softened cream cheese
- 30g of softened butter
- 75g of powdered sweetener
- 5 Ml of vanilla essence
- 15ml of heavy cream
Preheat your oven to 180°C and line a muffin pan with 12 parchment paper cupcake liners.
In a large mixing bowl, add the eggs, heavy cream, and vanilla extract. Using an electric mixer mix for about 2 minutes until frothy.
Combine the dry ingredients: almond flour, coconut flour, sweetener, baking powder, cocoa powder into a different bowl.
Add the dry ingredients into the beaten eggs and continue mixing until a batter starts to form. Incorporate the softened butter and red food coloring. Stir for a few minutes more. Let the batter rest for 5-10 minutes.
Fill the cupcake liners with about two tablespoons of batter.
Transfer to the preheated oven and bake for about 18-20 minutes.
Prepare the cream cheese frosting by beating the butter and cream cheese until fluffy. Then add the vanilla and sweetener. Next, add the heavy cream and continue beating until all the ingredients have come together.
Once cooled, frost the cupcakes with the cream cheese frosting and decorate with your favourtie Valentines day topping.
