Banana Bread With Toasted Pecan Nuts

Enjoy an Easy Banana Bread With Toasted Pecan Nuts on National Banana Bread day. This recipe is extremely easy to put together and a family favourite. Use overripe bananas for an extra strong and soft banana bread. You can easily freeze this Banana bread and defrost it to enjoy at a later time.

Ingredients for the Banana Bread With Toasted Pecan Nuts

  • 125 ml of softened butter/margarine
  • 125-250 ml of sugar
  • 5 ml of vanilla essence
  • 2 eggs
  • 500 ml of  flour
  • 10 ml of baking powder
  • 2.5 ml of salt
  • 6 ripe bananas ( Mash 4 keep 1 for the topping)
  • Toasted pecan nuts(optional)

Method

Preheat your oven to 180’C (350′ F). Then start off by toasting your pecan nuts by placing them in a dry pan on a Hob. Beat the butter and sugar until creamy. Add the vanilla essence and the eggs one by one and beat well. Next, add your dry ingredients and mix well.  Then add the mashed bananas(and nuts) and mix well.

Add to a greased loaf pan, placing the extra sliced banana ontop and bake for 60 minutes.

Serve warm with butter.
