Ingredients For The Dark Chocolate Lava Cakes

  • Salted butter – 60ml
  • Powdered sugar – 60ml
  • All purpose flour – 60ml
  • vanilla extract – 5ml
  • 1 egg, 2 egg yolks
  • cocoa powder – 20ml
  • Good quality dark chocolate – 50g
  • Fresh or frozen berries


  1. Firstly preheat the oven to 210 degrees C. Grease two 400ml ramekins with non-stick cooking spray. Using a small sifter, generously dust cocoa on each of the ramekins.

  2. Next, chop your dark chocolate. Then add it to a microwave safe bowl with 60ml of butter.  Take it out and then stir until the chocolate is smooth and glossy with no lumps.

  3. In a small bowl, mix the egg and 2 egg yolks together. Add those to the bowl of chocolate as well as the vanilla extract. Then, add in the powdered sugar and flour. Mix gently until combined.

  4. Divide the batter in half into into the ramekins. Bake for 8-10 minutes until the cakes have lifted slightly and the edges are cooked. The inside will still be gooey this is what makes the decadent sauce .Remove the lava cakes from the ramekin or eat them straight from the ramekin.

  5. Top with fresh fruit, ice cream or whipped cream. Enjoy!
