Slow Cooked Irish Stew

Saint Paddy’s day is here. Try this Slow Cooked Irish Stew in your slow cooker for a delicious hearty meal. This traditional Irish stew is perfect for a cooler Autumn evening.

Ingredients

  • Beef stew meat – 500g
  • Onions – 1, chopped
  • Carrots – 2, chopped
  • Potatoes – 2, peeled and chopped
  • Flour – 2 Tbsp
  • Cooking oil – 1 Tbsp
  • Tomato paste – 2 Tbsp
  • Soy sauce – 1 Tbsp
  • Garlic – 3 cloves, minced
  • Beef stock / broth – 2 to 3 cups
  • Guinness- 1/4 cup
  • Red wine – 1/4 cup
  • Bay leaves – 2
  • Black pepper – 1/4 tsp

Instructions

  1. Toss meat with flour. Heat a skillet over medium-high heat. Add oil and then sear meat until browned on the outside.
  2. While meat is browning, mix together tomato paste, soy sauce, beef, Guinness and red wine (if using) in slow cooker.
  3. Transfer browned meat to your slow cooker. Add garlic, onions, carrots, potatoes, bay leaves, and black pepper.
  4. Cook low and slow for 6 to 7 hours or high for 3 to 4 until meat is falling apart and tender.
  5. Remove bay leaves. Season to taste with salt and pepper.
