For the dough

  • 190g plain flour
  • 2 eggs
  • 60g grated cheese
  • 280ml milk
  • 60ml olive oil
  • 7g salt
  • 12g instant yeast


  • 250g cream cheese
  • Dill, chopped
  • 200g peas
  • 1 avocado
  • Salt
  • Pepper


Separate the egg whites from the yolks. Using the whisk attachment, on the Smeg hand mixer. Whisk the egg whites on the highest speed, until stiff peaks are formed.

In another bowl, mix the egg yolks with the milk and extra virgin olive oil. Add the grated cheese and mix until combined. Next, add in the flour and baking powder. With a clean whisk attachment, using the lowest speed setting, whisk until combined.

Using a spatula, gently incorporate the whipped egg whites. Fold the eggs into the mixture, taking care not to knock out too much air.

Next, Pour about a ladle of the mixture onto a pre-heated and greased waffle iron. Cook for about 5 minutes, or until golden brown.

Tip half of the peas into a pan with a drizzle of oil and let them brown over a medium heat. Peel and slice the avocado.
