Slow Cooker Pot Roast

We’re in the thick of soup & stew season! Let the slow cooker do all of the work with this easy Slow Cooker Pot Roast recipe. If you are looking for something delicious and easy to make for your family during the school holidays this is the perfect recipe to try.

Ingredients For The Slow Cooker Pot Roast

  • 1 onion chopped
  • 2 minced garlic cloves
  • 1 1/2 cups beef or vegetable stock
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp vinegar
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1kg of stewing beef or lamb
  • 3 – 4 potatoes cut into 2x2cm pieces
  • 2 – 3 carrots cut into 1cm rounds pieces
  • 1 cup frozen peas
  • 2 tbsp corn-starch
  • 3 tbsp Water
  • 2 tbsp chopped fresh parsley optional


  1. Add everything except peas, corn starch, water and parsley to your Instant Pot or slow cooker.
  2. Set to Slow Cook– 8 hours.
  3. When cook time is finished, add frozen peas (they will thaw using the residual heat).
  4. Mix corn starch and water to make a thickener and stir into the stew. Allow to thicken and heat up again.
  5. Garnish with parsley and enjoy!
