Magical Milo Cake

Spoil your family with this incredibly delicious Magical Milo Cake – with its incredible malty chocolate flavour it’s a real crowd pleaser for every occasion.

Ingredients

  • 2 cups (260g) of all-purpose flour
  •  3/4 cup (60g) cocoa powder
  • 1 1⁄2 tsp baking powder
  • 1 tsp baking soda
  • 1⁄2 tsp salt
  • 1 1/2 cups (300g) granulated sugar
  • 2/3 cup (170g) unsweetened apple sauce sub with the same amount of whisked eggs
  • 2 tsp vanilla extract
  • 1⁄2 cup canola oil + 2 tbsp (115g)
  • 1 cup (245g) plant-based milk ( I used soy milk)
  • 1 tbsp apple cider vinegar
  • 3/4 cup hot water
  • 1 tsp instant espresso powder

Frosting

  • 250g soft margarine
  • 4 cups powdered sugar
  • 1/3 cup raw cacao powder
  • 1/3 cup milo
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat the oven to 180 degrees Celcius and spray the Olala Springform Cake Pan with nonstick spray and line the bottoms with parchment paper, mix together the milk and vinegar and set aside to curdle (making vegan buttermilk), or make use of normal buttermilk.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl and set aside.
  3. In a large bowl, either whisking by hand or with an electric mixer, combine the sugar, apple sauce, oil, and vanilla.
  4. On the side, mix together the hot water and espresso powder. Set aside.
  5. To the sugar mixture, alternate adding the milk and dry ingredients, starting and ending with the dry ingredients. Stop and scrape down the bowl about halfway through.
  6. Once that’s smooth, slowly mix in the hot espresso. Now the batter will be very thin.
  7. Pour the batter into the cake pans and bake for 30-35 minutes, or until a toothpick in the centre comes out clean.
  8. Allow the cake to cool in the pan for 20 minutes, then remove them from the pan and let them completely cool at room temperature before frosting. To speed up this process, you can pop them into the fridge.
  9. Smooth out the margarine in a bowl, and sift in the icing sugar cacao powder, and milo.
  10. Mix until smooth add in the vanilla and the salt and frost the cake with a generous amount of the frosting, add shaved chocolate and malted chocolate balls.
  11. Serve & enjoy your magically malty Milo Cake
