Pastry Delights for Eid!

Eid marks the end of  Ramadan which is the month of fasting for the Muslim community. The best way to celebrate this joyous occasion is with  family, friends and the community. Moreover, celebrating with gifts and feasting adds to the sense of togetherness. These pastry delights for Eid will be a hit at the table and feature some signature Middle-Eastern flavors such as rose and pistachio. Last week at our Umhlanga branch, we hosted Sabeeha from Exotic Savouries. Sabeeha created these delicious pastry delights for Eid at our Phillips stand. They were a hit and had everyone licking their fingers, which your family should too.

Here are the recipes below :

Rose and Pistachio Tart

Ingredients

  • 1/2 cup of ground pistachios
  • 1 tablespoon butter
  • 1 tablespoon dessert cream
  • Butter puff pastry
  • 1 1/2 cups of butter
  • 2 tsp vanilla essence
  • 1 1/2 cups of icing sugar
  • 1 drop of rose essence
  • Few drops of Green food coloring

Method

  1.  Mix together the pistachios, 1 tablespoon of butter and dessert cream to form a pistachio paste.
  2.  Cut the butter pastry into strips and bake the sheets at 180 degrees for 10 minutes.
  3.  Using a hand mixer, whip the butter, vanilla essence, icing sugar, rose essence till it’s pale, light and fluffy.
  4. Fold in the pistachio paste into the fluffy frosting mixture and add a few drops of the Green food coloring. Ensure it is well incorporated.
  5. Slice the puffy and golden brown pastry sheets in half and pipe the mixture between the sheets and a bit more to garnish on top.
  6. Decorate with more crushed pistachios and edible dried rose petals, serve and enjoy!

 

Pecan Pie

Ingredients

  • 1 cup chopped pecans
  • 3 eggs
  • 1/4 cup sugar
  • 1 cup corn syrup
  • 2 tsp vanilla essence
  • Butter puff pastry

Method

  1. Cut the puff pastry in circles to fit muffin tin ramekins.
  2. Whisk together the eggs, sugar, corn syrup and vanilla essence till combined.
  3. Poke holes at the bottom of the pastry so it doesn’t puff up as much.
  4. Place the chopped pecans in the bottom of the pastry and pour the liquid mixture over the nuts.
  5. Bake at 150 degrees in an Airfryer for 20 minutes.
  6. Dust with powdered sugar and glitter to serve!
