  • 8–10 large brown mushrooms, stems removed
  • 2 tbsp butter or olive oil
  • 2 cloves garlic, minced
  • Mushroom stems, finely chopped
  • ½ cup breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • Salt & cracked black pepper

Method (Airfryer Option)

  1. Remove stems and finely chop them.
  2. Sauté chopped stems with butter and garlic for 2–3 minutes until softened.
  3. Remove from heat and stir in breadcrumbs, parsley, salt and pepper.
  4. Spoon mixture generously into mushroom caps.
  5. Airfry at 180°C for 8–10 minutes until mushrooms are tender and the tops are golden and bubbly.

Dinner for 2 – Main Course: Creamy Tuscan Chicken (or Mushroom) with Baby Potatoes

  • 2 chicken breasts

Method

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a pan and sear chicken on both sides until golden (about 4–5 minutes per side). Remove and set aside.
  3. In the same pan, sauté garlic briefly.
  4. Add stock and cream, simmer gently.
  5. Stir in parmesan and sundried tomatoes.
  6. Return chicken to the pan and simmer until cooked through.
  7. Add spinach and cook until wilted.
  8. Garnish with basil and serve with crispy baby potatoes.

*Swap chicken for large brown mushrooms or thick slices of roasted butternut, it’s equally rich and satisfying.
