Durban Chicken Curry!

1kg Chicken cut into pieces

1 medium onion diced

¼ tsp Cumin Powder

2 Tbsp Chicken Curry Masala

½ tsp Garam Masala

1 tsp Paprika

2 Tbsp Kashmiri Chili Powder

2 Tomatoes diced

1 Bay leaf

1 Black Cardamom

2 pieces Cinnamon sticks

1.5 Tbsp ground Ginger and Garlic

Coriander leaves

3 Tbsp oil

Method for the best Durban chicken curry:

  1. Heat oil on medium temperature; add onions and whole spices and sauté.
  2. Drop in the powdered masalas, then ginger and garlic paste and tomatoes.
  3. Allow to fry for 3 minutes, then add the chicken and salt to taste. Stir intermittently, cover, and cook for 6 minutes, then add 1 cup warm water and leave to simmer until gravy thickens.
  4. Garnish with coriander leaves.


Serve your chicken curry hot with rice, naan or bread.
